I re-did this recipe a little, to cut down on the sugar, oil, and add some other ingredients to make it healthier.
5 large carrots (chopped up in your blender/food processor) or grated if you want to use elbow grease lol
2 cups flour (I used i cup ground Quinoa and Oats together, 1/2 cup wheat, 1/2 cup white).
1 cup sugar
1 large tablespoon honey
1 cube of butter
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1 tsp. baking powder
1 tablespoon of Chia seeds
1 tsp. baking soda (mixed with a little apple cider)
1 tablespoon ground flax
We usually use an ice cream scooper to get the best measurements for your cupcake tins. I would mix in the carrots last after everything is mixed well.
Bake 350 degrees for aprox. 25 minutes
