Preheat Oven to 375 degrees
1 pie shell (frozen or fresh)
Eggs (you can use egg beaters (whites only) or regular eggs) so the amount would be about 5-6 eggs aprox.
4 oz. cream cheese (1/3 fat is what I used)
shredded Parmesan cheese
4-6 oz shredded cheese (your choice)
fresh garlic or some garlic butter sprinkle (or just use a little salt if you dont like garlic)
fresh veggies (your choice)
The first thing to do before you start building your pie, you put into the oven alone, your pie shell and cook at 375 degrees for about 12 minutes. Its always better to make sure the bottom of the pie is cooked before. From my experience, this is better because otherwise your at risk of the bottom of the pie shell being mushy. Once, done, remove from oven, now you can start building your pie.
Next, fill the pie shell 1/2 with veggies
Then, add your cheese, and garlic, including the Parmesan cheese (save a little on the side to sprinkle on the top).
Next, you add your cream cheese in with your eggs into a bowl and use your mixer to mix them together well. It may not blend in all the way, it really ok, it will all cook together and you wont see cream cheese chunks when its all done. ( you can see what I mean from my picture below).
Pour your egg mixture over the top of the cheese, until filled to about the top of the pie shell. Then, sprinkle with your remaining Parmesan cheese.
Bake at 375 degrees for 30 minutes, then, turn the oven down to 350 degrees for another 15 minutes.
Cut through with a knife to ensure the egg mixture is all cooked.
