We had alot of fun making these bars, they almost came out like cake/brownie like bars. They were very easy to make and it was nice to use the Pepitas, they really made a great taste to the bars.
Preheat Oven to 350 degrees
1 8oz bag of Pepitas
1 10-12oz bag of Sunflower Seeds (we used honey roasted)
2-3 tablespoons of honey
1 tsp. cinnamon
1 1/2 cups oats
1 tsp. salt
3/4 of the large can of pumpkin, I’m sure you don’t have to do this exactly, I’m sorry I didn’t have the exact measurement down. Funny though I didn’t taste the pumpkin at all, so if you want it pumpkin flavor like, add your pumpkin seasonings, nutmeg, ginger, pumpkin spice mix. I was thinking about trying bananas next time? I don’t know?
1/4 cup milk (your choice)
3/4 bag chocolate chips (or try coconut, nuts, raisins, white chocolate chips)
Grind up the Pepitas to a flour like substance. (It gave me some ideas for some future recipes)
Stir in the rest of the ingredients (I did by hand without a mixer) then add your chocolate chips last after everything is well mixed.
Lay out some wax paper or just your cookie sheet if you dont have wax paper and spread out into bars. I recommend the clay cookie sheet from pampered chief. (I’m not in the business or anything, its just really the best cookie sheet in my option).
Bake at 350 degrees for 30 minutes.
I cut them into bars while they were cooling down right out of the oven, I thought it would be easier to cut them then. Take them for a snack for your kids at school or eat them for breakfast. Its always better that it didn’t come out of a box, you know whats in it, and you made it.
