I finally got a super good recipe together: no added oils, butter, or added sugar Muffins. I'm so excited about these
I calculated these at 75 calories each for the mini muffins, it makes 24..
PREHEAT OVEN TO 350 degrees
1 Blackened Banana (I usually freeze mine then melt them down in the microwave)
1/4 cup almond flour
1/2 cup peanut butter
1/4 cup honey
1 tsp. baking powder
1/3 cup chocolate chips
1 tsp. vanilla
1/4 cup coconut shredded
This makes 6 cupcake size muffins, so double up the recipe to get a dozen muffins. But again, I love that I didn't add oil, butter, or sugar to this.
Bake about 25 minutes at 350 degrees
