Preheat Oven to 400 degrees
1 1/2 cups flour (Use your choice of flours, quinoa, rice, wheat, or a mixture, etc.)
2 Tablespoons of honey
3/4 cup sugar
1/2 tsp. salt
2 tsp. baking powder
1/3 cup canola oil
3/4 cups milk or favorite coffee creamer
3 tablespoons oats
1 - 1/2 cups fresh blueberries approx..
*(for the top, have some brown sugar w/a couple tsp. Flour and a little cinnamon.)
Its best to use the mixer to mix the eggs, sugar, and honey first well. Then add the rest of the ingredients, except the blueberries last after its all mixed well. I have one of the kids put the muffin tins in the muffin pan then use the ice cream scooper to scoop in measured amounts of the mix into each muffin tin. Then, take the brown sugar /flour mixture with a little cinnamon and put a spoonful on top of each muffin.
Cook for 20-24 minutes aprox.
