My daughter just pointed to this picture as I’m posting this now and said “oh, mom, you have to make these again, they were so delicious”.
We made them for dinner one night, during the week we get such in a rush that we dont make eggs as often as I would like, so this was a perfect easy middle of week dinner.
Preheat Oven to 375 degrees
Sliced Ham (your choice on kind) you want to get medium to large slices so they fit inside of muffin tins.
eggs (or egg whites, or egg beaters)- amount would be 8 eggs or more depending on how many you want to make
a little milk (or plain almond milk)
shredded cheese around 8 oz
Put the ham in the bottom of muffin tins.
In a mixing bowl, get your eggs and milk mixed well together. (Add some veggies if you want), then sprinkle with your cheese).
Bake for about 20-25 minutes.
