My Husband raved about these and how good they were.
We cooked the Roast Beef in the Crock Pot all day on low.
Then Rolled the corn tortillas with some cheese and the beef. I chose the softest most flexible corn tortillas I could find. They only cracked a little bit, without using any oils.
Then, baked in the oven at 385 degrees for about 30 minutes so they were crisp.
I made up a batch to keep in the fridge to for the family to eat as they go.
