These were so yummy and so easy to make. I found the recipe on Pinterest.
Preheat Oven to 375 degrees
5-6 large potatoes
deli sliced roast beef
cheese (your choice)
**optional for topping after cooked, brown gravy, ranch dressing, bbq sauce
**fresh garlic for mashed potatoes
**some shredded carrots and or zucchini (I didn’t do this, but I was thinking that it would of been nice to put them in side the mashed potatoes)
Cook, mash, and season your mashed potatoes (you may want to add fresh garlic)
Start rolling up your mashed potatoes in your beef slices and sprinkling with cheese (same as you would enchiladas). You may want to try adding the shredded veggies inside also during this part, I really think they would make a nice touch.
Bake at 375 degrees for about 25 minutes or less depending on your oven. I know that mashed potatoes sometimes do not taste as good the next day. This wasn’t the case with this recipe. My husband said to heat them up the next day very good and they taste great as a make ahead recipe. The person on Pinterest said to butter your pan before putting the rolls down, I disagree, you dont need to butter or oil your baking dish, I didn’t, and mine did not stick at all.
