Quiche really is one of the most easiest recipes to make. I had not made this one in a while and I have to admit I don’t make it exactly the same every time, I kinda throw everything in and pour the eggs on top and wait for it to cook. So, here is what I did tonight. Hope you enjoy them as much as we do.
Preheat Oven to 375 degrees
First Step: 2 Frozen Pie Shells (you really want to cook 2 at once, they come 2 in a pack right, so it really makes since to cook them both). Go ahead and put these in the oven right away and get these cooked for about 15 minutes so the bottom of the shell is cooked.
chicken cooked and chopped up
enchilada sauce (green or red your choice)
1/5 onion or 2/3 shallot
2 cloves fresh garlic
Veggies: Carrot, cauliflower, broccoli, spinach, your choice : I use what ever I have
6 eggs with some milk mixed in a bowl like your making scrambled eggs, set aside
once the pie shells are done cooking:
add your chicken
Then add your green chilies and onions or shallots chopped up.
Then, take your veggies and mix them up in your blender with your enchilada sauce and some salsa until fully blended.
Then, spread the mixture on top.
Sprinkle with Cheese and add a little more enchilada sauce just from the can on top of that.
Then, take your eggs and milk and mix well in a bowl, then pour over the top, spreading around as evenly as possible. Some will seep down, thats ok. Sprinkle some more cheese on top of that.
sorry, kind of a blurry picture but these are ready to go in the oven at 375 degrees for about 40 minutes. Keep an eye on them after 35 minutes. You will need to cut into them a little to make sure the egg is cooked all the way.
