Preheat oven to 375 degrees
Cooked Chicken (I dont know exactly how much, but enough from one whole chicken) I got one of those $5 chickens already cooked so it was easier.
12 oz (about) Monterey Jack Cheese
1 large can of green enchilada sauce
1 large package of whole wheat tortillas (now you could use which ever type you prefer)
Take your baking dish and pour some of the can of enchilada sauce to spread on the bottom of your baking dish. Set aside for now.
Now, for the inner enchilada part mixture:
bunch of fresh spinach
1/5 part of an yellow onion
3 cloves fresh garlic
2 sm. cans of green chilies (not hot)
(Cilantro is optional, my husband is allergic, so I couldn’t use is, but add it if you can)
Take this mixture and blend in the food processor or blender -until its a sauce. Pour it in a large bowl with all the chicken pieces and 1/4 of the cheese. Mix together well. Then, take the green mixture and spoon into each of the wheat tortillas-making into the rolls. [No oils needed at all ]
Take your rolled tortillas with the green mixture and set in your baking dish(s) you set aside. Once full, pour the rest of the enchilada sauce on the top (dont make it too saucy), then pour rest of your cheese over top of pan.
Bake at 375 degrees for about 20 minutes, but depending on your oven, you could cook less or more.
