Ingredients: Step 1
1st, make a pan of cornbread. I have a great recipe you can try (instead of using the box mix) CORN BREAD RECIPE HERE
Once you have the pan of cornbread made, cut it up in cubes and set to the side.
Ingredients: Step 2
1-2 rolls of Sausage, your choice, cook these up prior.
*add onions, fresh garlic, seasonings of your choice. Cilantro, Jalapenos, etc. Don't be afraid to really season the meat well, due to the cornbread in the mix and eggs some of the seasonings may disappear away into all of the bread.
2 cups of milk
1 1/2 cups of salsa (drained, thicker)
2 cups of cheese
1 cup corn
Once the meat is cooked, mix together with the cubed cornbread you set aside.
In another bowl, start mixing the milk and eggs well. Then, mix into a large baking dish, adding the salsa, corn, and cheese, evenly distributing all the ingredients around.
Bake 350 for 1 hour to 1/2 hour until the eggs are cooked all the way through. Some recipes mention about letting this pre-cooked to sit overnight in the fridge, you can do that, make it the night before and then cook for dinner the next day. I did not do that, I made it all the same night. (I was short on time), so, either way works, what ever is best for your schedule.
