1 cup of cooked Quinoa (cook 1 Quinoa to 3 cups water, boil 20 minutes on low heat like rice.)
3-4 cloves of fresh garlic
handful of basil leaves or dried
2-3 green onions
2 cups of greens, your choice, I used a mix of collard greens, mustard greens, turnip, & kale. Other recipes call for only spinach. Use the ones you perfer.
fresh asparagus 5-6 (bottoms cut off) (you can use more in the bottom of the crockpot)
[chop up all your greens together]
==you want to have equal greens to your quinoa.
4 oz parm cheese
4-5 oz of feta cheese (to top when they are done cooking).
mix well in a large bowlSprinkle in your parm cheese
Get your bell peppers ready, tops cut off and cleaned out.
Stuff the Bell Peppers with the mixture once its mixed well.
I’m cooking on High for 3-4 hrs.
I also filled the bottom of the pot with the remaining asparagus.
