On my hunt to eat healthier lower in calorie lunches, I made this different approach to the regular Quiche (one of my specialties).
I couldn't believe how good and filling it was. With the green beans, it almost reminded me of the Green Bean Casserole.
Funny thing was I didn't add any seasonings, no salt, etc. and it still tasted great.
Prep: Cook these at the same time: 4 things first.
1. I took my Spaghetti Squash and cooked it as I always do, I just wash it off and throw it on an oven rack, 375 degrees for about 30 minutes. I don't like to pre-cut it, its usually too tough to cut prior to cooking, and I believe its safer to do it this way.
2. I took the Quinoa and cooked it, 1 cup Dry Quinoa to 2 Cups of water (similar to rice).
3. 1 took the Lentils and made them as the same time, rinsing off well, I poured a cup or so in a pan of boiling water for about 30 minutes.
4. Then, after a few minutes, I boiled my green beans.
Then your Quinoa
Then layer with your Lentils
Then, add your tomatoes, kale, green beans, and spread over the top.
Then, sprinkle with your choice of cheese
Then, pour your egg mixture on top
Sprinkle the top with Parm Cheese
