These were super easy to make. Almost like enchiladas. One of my favorites. You can use low fat cheese and beans and besides the carbs from the tortillas, this is a very low fat meal. Makes a nice lunch to take to work.
Preheat Oven to 375 degrees
Package of your favorite tortillas
2 cans of refried beans (or make your own)
8-12 oz of shredded cheese
1 large can of enchilada sauce
Take your large baking dish and fill it up with bean burritos. Just spread the beans on your tortillas, fill with cheese, and wrap up. Lay out in your baking dish. When your pan is filled up, pour the enchilada sauce over the top. Then, sprinkle with more cheese.
Bake at 375 degrees for about 20-25 minutes.
